Tofu Scramble
This one's for the vegans and mmm mmm is it ever good. Amy's does it again, this time with their "Tofu Scramble". Here's what reads on the back of the box : "Generous portions of tofu scrambled with organic tender spinach, carrots and mushrooms along with hash browned potatoes make up a dish which is simply too delicious to miss. And of course this makes a great breakfast, quick lunch or dinner. Amy's grandma, who doesn't have a microwave, adds a bit of olive oil to a skillet and heats her breakfast that way." Better said than I could do.
Personally, I find this to make a hearty, delicious and satisfying lunch which takes four minutes to microwave (45 in the oven, if you want it as a dinner, though I'd reccomend at least a side dish with this if for dinner). Like with the "Tofu Rancheros" reviewed here earlier, this is packed with protein, as well as Vitamin A, C, Calcium, and Iron. All of the ingredients
are organic and there are no Bioengineered Ingredients or GMOs. Who knew that something so healthy would taste so darn good?

It's so rare for me to find a new favorite food. I am such a creature of habit that I rarely try anything different or exotic. A few weeks ago I had a hankering for chili. But to be perfectly honest, none of the typical vegetarian chilis were doing anything for me. I usually had to doctor them with salt and cayenne just to have a little bit of flavor. But then I found Amy's Organic Spicy Chili. I'm a sucker for anything red and I was really drawn to the deep red colors on the can. As I cooked it that evening I had all of my standards out on the counter--cayenne pepper, salt, cheese--ready to liven up the flavor. But after testing a spoonful I realized it needed nothing. This chili is PERFECT just the way it comes. And, honestly, that's just not something you find very often. Bottom line; I have found a new favorite food; one that's actually good for me to eat. I look forward to the cold rainy San Francisco winter now that I have something rich and hearty to keep me warm!
