This is a great party dish, best served chilled. Cool and refreshing, it’s a great start to a festive meal or get-together. Serve this in little shooter glasses and let the party begin!
Clean and prep the vegetables then set aside.
Pour the 2 cans of soup into a large bowl.
Add the rest of the ingredients into the bowl and mix well. Chill for at least 1-2 hours to let the flavors infuse.
Either serve in small bowls or chilled shooter glasses.
If you have leftovers, blend up a refreshing tomato vegetable juice to enjoy. You can also freeze the remaining Gazpacho in ice cube trays. Use the cubes for soups or beans for a later day.
