Buffalo Veggie Burger

With Buffalo sauce-brushed patties, pepper Jack cheese, avocado and quick-pickled onions, this veggie burger has just the right balance of heat, tang and creaminess. Each layer of rich flavor and texture will make you want to whip this up on the reg!

Serves 4 Easy

Directions

  1. In a small bowl, place sliced red onion and juice from 4 limes. Make sure the onions are completely submerged in the lime juice. Let them sit overnight.
  2. After the onion and lime mixture has sat overnight, preheat oven to 400°F.
  3. Place veggie burger patties on a lightly oiled baking sheet and bake for 4-5 minutes on each side until slightly crispy.
  4. Remove from oven. Brush each patty down with Buffalo sauce on both sides.
  5. Place a slice of pepper Jack on each veggie burger and return them to the oven for 2 minutes to melt the cheese.
  6. Brush avocado oil inside of each bun and lay them in the oven until they start to turn golden brown then remove quickly.
  7. Each veggie burger should have 1 or 2 patties with 1 or 2 slices of cheese, a handful of spinach or arugula, a few slices of avocado and some quick-pickled onions.

Pro tip

Make this veggie burger dairy free by leaving out the pepper Jack cheese or swapping it for almond jalapeño Jack-style cheeze.
