The Rome Veggie Burger

This veggie burger is molto delicioso! It features Amy's California Veggie Burger piled high with marinara sauce, sautéed zucchini, balsamic roasted eggplant and plenty of gooey mozzarella.


Serves 2 15 minutes Intermediate

Directions

  • Slice eggplant and zucchini into ½ inch pieces.

  • Heat olive oil in a medium sauté pan over medium high heat. Add veggies and sauté for 3-5 minutes.

  • Add balsamic vinegar and cook until soft. Remove from heat.

  • Warm marinara sauce in a microwave-safe container or on the stovetop.

  • Meanwhile, cook veggie burgers according to directions on box.

  • Toast ciabatta bread and lay down a good layer of marinara sauce on the bottom half of the roll.

  • Add veggie burger, sliced mozzarella, cooked veggies and an extra spoonful of marinara sauce. Top with the other half of the roll.
