With origins claimed by India, Pakistan, Bangladesh, Scotland and Britain, this might just be the most beloved sauce in all of Indian food. Hand-roasted spices, organic tomatoes and coconut milk are served over creamy cubes of paneer. Great flavor starts with great ingredients. Our task is to find them. We try to stay as local as possible, and we can grow wonderful short and long grain rice in California, but Basmati rice, for unknown and mysterious reasons, just tastes better when it’s grown in India.
