Butternut Squash Flatbread with Herbed Vegan Ricotta

Raise your hand if leftovers are your favorite part of the holidays! This pizza combines all the best flavors of the season, repurposed to enjoy at a later date.

Directions

  • Prepare Amy’s Roasted Vegetable Pizza according to package instructions but remove pizza from oven halfway through cooking time. Top with dollops of butternut squash and put pizza back in the oven to finish cooking.
  • When the pizza is done, remove from oven and sprinkle with chopped fresh sage, dried cranberries, vegan ricotta cheeze and a few turns of freshly cracked black pepper. Drizzle with balsamic vinegar reduction for the finishing touch!
