Tender baked sweet potatoes make the perfect vessel for hearty Amy’s Chili. (If you needed a reason to always have a can of Amy’s Chili in the cabinet, you just found it.) The balance of sweet and savory is just right. Add your favorite toppings and dinner is served.
- Preheat oven to 400°F. Wash the sweet potatoes and pierce them with a fork about 5 times. Place on a baking sheet lined with parchment paper and bake until tender (about 45 minutes to 1 hour).
- When the sweet potatoes are nearly cooked, prep toppings and heat Chili according to instructions on can. Once the potatoes are done, cut them open, add your tasty toppings and enjoy.
Roasting whole sweet potatoes takes a little bit of time, and many nights there isn’t an hour to spare before getting dinner on the table. Cut cooking time in half by microwaving pierced potatoes on high for 5 minutes before putting them in the oven.
