Mini Vegan Burger & Veggie Skewers

These veggie skewers can be enjoyed as appetizers, snacks or a first course during your holiday celebration.

Serves 4-6 Easy

Directions

  1. Peel the onion and cut it into 1-2 inch squares.  
  2. Sauté the chopped onion in olive oil for about 2-3 minutes then set aside.  
  3. Reheat the roasted veggies.  
  4. Heat the veggie burger patties according to package instructions (1 minute in the microwave oven per patty).  
  5. Cut the patties into 4 equal pieces and start building your veggie burger skewers in the order of your choice (I used ½ patty per skewer).  
  6. Enjoy by themselves or with your favorite dip!  

 

Pro tip

If you don’t have skewers, this also makes a great veggie bowl. Simply follow the same instructions and mix the ingredients in a bowl instead.
