For the Green Goddess Dressing
Whisk together all the dressing ingredients in a small bowl to combine or, if you like a smoother dressing, combine ingredients in a small food processor and pulse until smooth.
Make “balsamic shallots” by covering the shallots in just enough balsamic vinegar to cover: let soak 10 minutes.
Cook veggie burgers according to instructions on box.
- Lay down a slice of tomato, followed by some arugula, a veggie burger and a hearty drizzle of the Green Goddess. Repeat for another layer and top with balsamic shallots.
