Hearty Amy’s Traditional Refried Beans, sweet and tangy slaw made of purple cabbage and mango with creamy avocado, all rolled up in a corn tortilla – what could be better?! These tostadas are fresh, yet filling, and perfect for a quick weeknight dinner at home.
- Combine all slaw ingredients in a bowl. Mix well so that dressing coats the cabbage and mango evenly. Set aside for 15 minutes to allow flavors to infuse.
- Heat Amy’s Refried Beans according to instructions on the can.
- Lay out 6 corn tortillas. Spoon beans evenly into the centers of each. Add a few slices of avocado to each taco and top with the slaw.
- Garnish with cilantro or sour cream, if desired. Enjoy!
