Sheet Pan Mushroom Onion Cheezeburger

Cook up this easy mushroom onion veggie burger recipe for two, four or more. Oven-roasted vegetables and cheeze make for a unique and delicious vegan burger.

- Preheat oven to 400°F.
- Cut 1 small red onion into thick slices and place on a baking sheet. Drizzle with olive oil and a splash of balsamic vinegar.
- Slice the cremini mushrooms and add to the baking sheet. Drizzle mushrooms with olive oil and sprinkle with salt and pepper.
- Bake vegetables for 30 minutes.
- Remove from oven, flip veggies and place back in the oven for an additional 10 minutes.
- On a separate baking sheet, lay out 2 veggie patties and bake for 5 minutes. Flip the patties and place a slice of cheeze on each.
- Place two hamburger buns, halved, face side down on the baking sheet. Bake for an additional 5-6 minutes until cheeze is melted and buns are toasted.
- Remove everything from the oven and assemble your burgers.

Prep veggies a day in advance to save time. Use gluten free buns if desired. Serve veggie burgers with a side of fries for a full meal.
