Amy's Black Bean Veggie Burger with Charred Corn Salsa and BBQ Halloumi

Smoky charred corn pairs so well with the natural earthy flavor of black beans in the Amy’s burgers. Any leftover salsa can be stirred through cooked rice or grains for a summery lunch outside or al desko.

DIRECTIONS
- Heat the BBQ to medium and brush the burgers, corn and spring onions with oil all over. Cook the burgers for 6-8 minutes on one side before flipping over to the other side. Meanwhile, place the corn on the BBQ, as well as the spring onions and cook, turning every minute or so, until the vegetables are charred and tender all over (the spring onions will be ready before the corn). Remove the vegetables from the heat and allow to cool slightly.
- While the BBQ is still hot, drain the halloumi and pat dry with a kitchen towel. Cut into 8 slices and brush each one with a small amount of oil. Place on the BBQ for 2minutes on each side, flipping carefully when one side is cooked. Cut the burger buns in half and toast the cut sides for 30 seconds. Remove everything from the BBQ and keep warm.
- Roughly chop the spring onions, cherry tomatoes and coriander, and mix together in a bowl with the cumin and lime juice then season with salt. Slice the kernels away from the corn cobs by standing the cobs in a bowl and using a sharp knife with a downward sawing motion (the bowl will prevent the kernels from going everywhere). Add the kernels to the salsa ingredients and mix well. Set aside.
- Spread the bottom half of the burger bun with mayonnaise then top with a few of the lettuce leaves. Place a black bean burger on top of the lettuce, followed by a couple of slices of halloumi and a spoonful of the salsa. Top with the burger bun lid and serve immediately.
Pro tip
Any extra BBQed veg, or even fruit can be chopped and added to the salsa for more smoky flavor; try zucchini, peppers or even wedges of grilled pineapple. If it’s not BBQ weather, use a griddle pan on the stovetop instead.
